Chewing gum
Chewing gum is produced by extrusion of a gum base incorporated with flavour(s), sugars or polyols and other texturizing agents. This process is often referred to as “Roll and Score”.
After production, and the core is matured and then coated with sugar, glucose or polyols to get a crunchy surface.
Waxing or film coating can be used to finish the product for visual impact and control of the water activity / shelf life.
Today, 97 % of the chewing gum market is sugar-free, produced with polyols like sorbitol, mannitol, xylitol and maltitol.
