Hard & soft liquorice
Liquorice is derived from the root of Glycyrrhiza glabra and has become the name for an entire group of sugar confectionery in continental Europe even though the actual content of liquorice in these products is relatively low.
The definition “hard and soft” refers to the texture of the product. The production method varies and can involve moulding, depositing, extrusion, stamping, etc.
Hard and soft liquorice can be made sugar-free and sugar-reduced using polyols and fibres.
