Whole muscle meat products are products with visible flesh particles exceeding 5 cm in size or whole muscles. To combine with other ingredients, meat is often soaked, tumbled and/or injected with brine solutions containing the active ingredients. Typical products are ham, fillets, formed or restructured products or portion controlled blocks of different shapes.
